Introduction.
The Halal Monitoring Committee is an independent, non profit registered charity who's main aim is to certify production of genuine Halal food. HMC complies with the UK laws for food production as well as Islamic dietary compliance laws. HMC provides animal welfare, issues of food safety, hygiene and quality in compliance with UK law and within the teaching of the Islamic faith. HMC works with companies who are involved with the production and supply of Halal food to independently certify all products to provide assurance to the Muslim community that all food meets the high standards of Halal.
HMC was established to ensure that all Muslims could be confident that the meat and product they consume are genuinely Halal.
Today HMC is the most trusted organisation in the UK and has the highest brand recognition amongst Muslim consumers and within the Halal sector. It has come to stand for the highest standards of Halal.
HMC also works with over 55 abattoirs and processing plants in the UK and Ireland and further afield. These suppliers work under HMC criteria and inspection, and are constantly monitored. In addition, HMC monitors over 550 shops and restaurants on a daily basis - a truly comprehensive monitoring system.

In Bristol the local community have established a HMC local area group. HMC monitor our premises on a regular basis, inspecting all fresh meat and poultry products for the authentic HMC stamps. Members of the HMC group also check general hygiene and practice. We feel this is the most comprehensive system available to our community in the UK and this is why we have decided to enrol.
We have started by certifying our two most established outlets and are hoping to register others in the future (as soon as products become available) to meet the demands of our local clientele and specific community needs.

Pak butchers is launching a campaign for more suppliers of HMC approved meat and poultry to come and trade in Bristol. At present there are very few suppliers and whilst many wish to go HMC, many retailers including butchers, restaurants and takeaways are not able to due to lack of supply. We feel this is not fair on Bristol and furthermore we feel that a lack of the right type of food products for any community violates ones basic rights as equal citizens.
Our HMC products are hand slaughtered following the rules laid down of Islamic Halal slaughter procedure. Products are monitored from the slaughter process to our certified shops and stored in a clean, healthy environment.
Pak Butchers, as the pioneer premier Halal meat and poultry store in the south west and south Wales has, over the years, maintained the highest standards in providing our customers with Halal products. With our own slaughtering we are now able to trace our products at every step, through the slaughter house to our customers.
We have our own chicken processing plant and meat slaughtering delivering HMC fresh products.
